Popular broth dishes have that delicious taste of yesteryear that we have all tasted once in our lives.
Bouillons are a type of workers’ restaurant that appeared in the 19th century, offering hot dishes at low prices. Born in the Halles district in 1955, the first broth of butcher Pierre-Louis Duval served meat with… broth of course. A dish in which leftover carcasses and small pieces made an ideal base for a comforting soup, garnished with vermicelli. All for a very competitive price combined with a simple and fast service. Fast food was born! A concept that quickly catches on. Many establishments opened during the second half of the 19th century, decorated in an Art Nouveau style, very fashionable at the time. Having returned to the forefront in recent years, broths have been and still are relevant, especially in the hearts of gourmets.
Broth dishes are above all classic, popular, accessible dishes that span generations. We discovered them at home or in the canteen, in the bistro or in brasseries. They are still more or less around and we take pleasure in returning to this tradition without fuss.
Among the flagship dishes of the broths, it is impossible not to mention eggs mayonnaise, leek vinaigrette, onion soup, pureed sausage, beef bourguignon, cabbage whipped cream, or chocolate mousse. Here are 18, between tradition and modernity, as good then as now.
