To choose a good orange, weigh it. The heavier and firmer the orange, the more juice it contains. Shiny bark is also a sign of freshness. The thickness of the skin depends on the preparations chosen. Opt for a thin skin if you want more juice and pulp, and a thicker skin if you intend to use the zest. Obviously, prefer organic oranges, because they will allow you to use the zest without worrying about pesticide residues.
