Who are the new three-star chefs?

For this vintage, two chefs won the supreme grail: three stars. Masterstroke for Fabien Ferré at La Table du Castellet (Le Castellet), who took over from Christophe Bacquié, with this distinction. Now the youngest three-star chef, at 35, Fabien Ferré has conquered the taste buds of inspectors with his dishes, an ode to Provence and the marine and plant terroir. On the sweet side, François Luciano's desserts, between freshness and lightness, give pride of place to seasonal products.

But Fabien Ferré is not the only chef distinguished by the famous guide. Jérôme Banctel for the restaurant Le Gabriel, within the hotel La Réserve Paris (Paris 8th), is also awarded a third star. Its plates between Brittany and travel souvenirs transport guests to elsewhere, and the four-course lunch menu is judged to be excellent value for money. Two new tables which join the previous 28.

The rest of the list

On the two-star side, 8 new restaurants stand out: Jules Verne managed by Frédéric Anton, on the second floor of the Eiffel Tower; Ruggieri House in Paris; L’Orangerie at George V by chef Alan Taudon; or even Sylvestre Wahid’s table – Les Grandes Alpes in Courchevel are among the new double-starred addresses. The Benoît Vidal House in Annecy; Mas Les Eydins in Bonnieux; Les Ambassadeurs by Christophe Cussac in Monaco and Ronan Kervarrec in Saint-Grégoire complete the list.

Also, 52 new tables are crowned with a first star including Onor by Thierry Marx, or l'Espadon at the Ritz Paris, the table of chef Eugénie Béziat.

In detail, this reference work compiles the addresses of 30 three-star restaurants, 75 two-star restaurants, 534 one-star restaurants, 94 green star restaurants, and 392 Bib Gourmand restaurants.
