With its mild temperatures, its longer days, and the sun which is becoming more and more present, spring is a friend who wishes us well! And on the plate, the change of season is also felt around a pretty spring salad.
Seasonal products on the menu
Good for the planet, the wallet but also the body, we say it, repeat it, and will sing it at the top of our lungs if necessary, we choose seasonal products! Peas, radishes, spinach, spring onions, green asparagus, fresh herbs, beans, early vegetables, the list of seasonal products is long. Since the vegetables are just emerging from the ground, most of them can be eaten raw, and they add lots of freshness and crunch to any salad. So now is the time to stock up on raw vegetables, rich in fiber and vitamins, if you tolerate them.
The strawberry queen
If we had to name just one food that embodies the arrival of spring, it would be the strawberry. Fleshy, full of sugar, with its beautiful carmine red color, it kicks off the season. Above all, strawberries are emblematic of products to consume in season! So taste a strawberry that grew in a greenhouse and crossed half the globe in the middle of December, and see the difference with spring products. A world separates them (plus hundreds of liters of kerosene but that's another story).
Also, know that strawberries work wonders in a spring salad. It brings a sweet-salty, very juicy note to any mixture. Obviously, it is a product that is best not cooked (except for a compote or jam), particularly in the case of a salad.
Strawberries also go perfectly with fresh cheeses, which are perfect during this season. They can be shaped into balls, coated with seeds, toasted or not, to offer a variation on mozzarella.
