Grand cru chocolate mousse and olive oil


  • 150 g of whipping cream
  • 75 g of milk
  • 180 g of dark chocolate with 70% cocoa
  • 75 g of milk chocolate with 40% cocoa
  • 3 egg yolks
  • 3 egg whites
  • 20 g caster sugar
  • grossane olive oil (or other)

  • cocoa nibs


  1. In a saucepan, bring the cream and milk to the boil.

  2. Remove from the heat, pour over the previously chopped chocolates, mixing with a whisk. Add the egg yolks.

  3. Beat the egg whites with the sugar using an electric mixer. Gently incorporate them into the chocolate mixture. The preparation must be homogeneous. Leave to cool for 4 hours.

  4. When ready to serve, place the mousse in a bowl, sprinkle with cocoa powder and drizzle with olive oil.
