In spring, no secret, we want green and fresh things on the plate, and at a very low price.
Seasonal products galore
Green asparagus; small artichokes; lovely spinach; crunchy radishes; gourmet beans; this season, green reigns supreme. Synonymous with the awakening of nature, these fresh products are the promise of delicious dishes. In risotto primavera; pies; spring appetizers; or gourmet verrines, seasonal vegetables bring vitamins and colors to the menu.
The good idea? Mix preparations of the same ingredient to have several textures. Let's explain. Spinach can be worked cooked, mixed with cream cheese, then served with fresh sprouts. Same thing with peas which easily transform into a delicious puree, to spread on grilled garlic country bread, topped with just blanched peas and cubes of feta, for very fresh spring toast.
Low prices on the menu
As fruits and vegetables are in peak season, and therefore available in quantity, they will be more accessible than other products from the ends of the world.
When it comes to grocery shopping, we think of basic products like flour, pasta, rice, which we cook at home to control our food budget but also know what's inside, rather than buying products already prepared, which often increase the bill. We also think of inexpensive proteins such as eggs, chicken, or even legumes, which can easily be transformed into seasonal recipes.
The temperature game
The advantage of spring and sunny days in general in the kitchen is that we no longer need to eat necessarily hot to warm up. Cold, lukewarm, or room temperature preparations are enough for our happiness. In addition, we play on the hot/cold contrast to bring depth to the tasting. Always with the aim of bringing surprises to the tasting, we liven up our crunchy recipes with roasted and chopped seeds and oilseeds; toasted bread croutons; or even homemade parmesan tiles.
