How to use it ?

The pistachio powder can be used differently depending on the fineness of the mixture. If the oilseeds are roughly chopped, or just crushed, they will be used for their crispness, in cakes, cookies or as a topping. A very fine powder will be useful for replacing, or supplementing, part of the flour in cake and cake batters, to which it will add softness. Cooking time: 30 mins

For 1 jar

  • 190 g pistachios
  • 120 g of white sugar
  • 2 tbsp. tablespoon of water
  • 1 C. teaspoon of fleur de sel

Bake the pistachios on a baking tray in an oven preheated to 170°C. Leave to roast for 10 minutes.
In a saucepan, pour the sugar, water and fleur de sel. Heat gently, without stirring, until caramel forms and bubbles appear on the surface.
Add the pistachios, mix to coat them with sugar. At this point, the caramel will take on a sandy texture. Let the sugar melt again until all the pistachios are coated in caramel.
Remove this mixture onto a sheet of parchment paper or a silicone mat. Let cool.
Break the plate of caramelized pistachios into pieces, mix everything in a food processor until you obtain a very liquid praline.
Pour into a pot. It’s ready to use.

How to use it ?

REAL fans of pistachio eat it with a teaspoon. Otherwise, it is also used as an insert in pies, cakes and desserts, to add maximum deliciousness to your recipes. Pistachio praline also blends wonderfully into ganaches, or to make an original Paris-Brest (just as wonderful).

Pistachio spread

The ultimate level of indulgence: pistachio spread. It is prepared by adding melted dark or white chocolate. You can also add crushed pistachios or lace crepes, which add crunch.

How to use it ?
