When we think of picnics, we think of cold cuts and chicken sandwiches. They are essential for convivial moments in the sun, to the point that some people can’t do without them. For all the vegetarians for whom picnics would be a sign of restriction, you’ve come to the right place. Here’s how to prepare a vegetarian and generous lunch in the great outdoors.
For a picnic, think practical
When you travel to eat outdoors, by the sea, in the forest or a park, you have to think about practicality. A bit like preparing snacks to take on the road to your holiday, you have to remember that once outside, some products deteriorate quickly. Dairy products – like yoghurts and cheeses –, freshly cooked hot dishes (scrambled eggs or stews) or ice creams, by the time you get to the picnic spot, these preparations may no longer be in good condition. Not to mention that in terms of practicality, when you are not seated at a table, it is better to plan for sandwiches and cold preparations to nibble on. To keep everything well, plan for airtight containers. You will store salads, spreads and cut fruit in them. In short, anything that could leak. For dry products, like crackers, protect them with plastic wrap or aluminium foil. Anything fresh, like cheese and homemade drinks (to be transported in large flasks), goes in the cooler. Finally, for small sweet treats, it is better to avoid taking anything that could be lost in the heat, like chocolate mousse or yogurts. Opt instead for cakes, biscuits and dried fruits!
Peck at the plant
Picnics are a sign of a great aperitif. For vegetarian preparations, focus on snacks to share! The opportunity to pull out all the stops, between salty shortbread, crackers, pita bread and croutons, to dip in chickpea (or radish) hummus and olive tapenades. With cucumber, you can also prepare tzatziki. Then, what can you replace the sausage with? With vegetable sausage! In the grocery store, you will find a multitude of sausages prepared with beans, chickpeas and spices. A treat and a successful optical illusion.
What sandwich to make when you are vegetarian?
Vegetarian sandwiches are not just made up of vegetables and raw vegetables. It is quite possible to replace the chicken with vegetable strips made from soy (available in grocery stores), or opt for falafels. The result is guaranteed flavor and protein. To change from the traditional sandwich, why not prepare spring rolls? A great opportunity to enjoy seasonal vegetables in a different way than in bread or raw!
