Choose without cooking
In summer, we tend to prefer no-cook recipes for their freshness and speed of preparation. Vegetable carpaccio; Greek salad ; or tomato gazpacho: these light and refreshing summer recipes are quick to prepare and are perfect for days when the temperature rises. Cooking without cooking allows you to preserve vitamins, minerals, nutrients and essential fatty acids, which are usually damaged by cooking. Raw food, also known as live food, helps preserve more of the flavors of food and encourages chewing. Chewing your food well promotes better digestion and no one likes feeling bloated. But no-cook is obviously not the only option. You can also make grilled fish like red mullet, sole or sardines. We also think of meat lovers who will benefit from white meat skewers that are very quick to cook.
Sweet and sour for summer
What do we eat tonight ? With the stalls filled with sunny vegetables, we have a choice. So we don't waste time unnecessarily, we cook with seasonal fruits and vegetables that we have at home or head to the market. For example, we imitate chef Juan Arbelaez with his recipe for peppers, the ultimate sunny vegetable, cooked on the barbecue for a vegetarian (or not) dish full of flavors!
In summer, combining sweet and savory flavors is a great idea to cool down and it doesn't take time.
Original but delicious: fruits have as much place as cooked or raw vegetables in sweet and sour summer salads. Fennel salad, peach, raw ham; or salad of tomatoes, mozzarella, strawberries and pomegranate vinaigrette; It’s up to you to make the right flavor combinations. The fruits will also go perfectly in white fish ceviches. To change from lemon, opt for other citrus or tangy fruits such as grapefruit, raspberry, or pomegranate. Generally speaking, fruits go well with cheese such as feta and fresh goat's cheese. You can also try the fruit-meat combination with duck breast skewers with blueberries.
