Shellfish and crustaceans
For February 14, if we choose to prepare the meal ourselves rather than discover a chef’s Valentine’s Day menu at the restaurant, we put the small dishes in the big ones, and the favorite products at the center of the menu . Among the flagship flavors that often hit the mark among gourmets, we note all the festive products. Namely, scallops, caviar, lobster, bottarga, foie gras, champagne, etc. Exquisite products that have a certain cost! This is why we reserve them for special occasions, notably Valentine’s Day meals.
The menu for sea lovers
To start the meal, we don’t yet dive into the sea but we stop for a while in the vineyards and gardens with an all-pink cocktail – we’re marshmallowy, what do you want – made with champagne and rose syrup. A fresh, sparkling and floral blend.
As a starter, we highlight the divine scallops, simply prepared as a carpaccio to reveal its fine and delicate taste. To season it, prepare lemongrass-infused olive oil in advance. Finally, we add a few grains of lemon caviar and chervil leaf, which will wake up the crustacean.
As for the main course, it’s time for the king: lobster, served American style, according to the recipe by Jean-François Piège. With a divine sauce prepared with carcasses, vegetables, white wine, and lots of love, the lobster seduces everyone.
Another proposal if the cost of lobster is not an option, sea bream which has the advantage of being accessible, but also of not being subject to fishing pressure! A fish to include more often on the menu, therefore. In a simply grilled version with thyme and bay leaf, it is a recipe.
As a final word, we leave the floor to chef Hélène Darroze who will surprise us in season 14 of Top Chef with her incredible soufflé pancakes with chocolate sauce. A somewhat technical dessert – advice: practice a little beforehand – which will amaze your loved one with its softness and deliciousness. Besides, what’s better than melted chocolate on Valentine’s Day? Another possible dessert that builds on this same asset, chocolate profiteroles, generous and delicious.
