Citrus juice infused with garlic, ginger and chili pepper by Pascal Barbot

Ingredients

  • 1/2 clove of garlic, peeled
  • 1 inch fresh ginger, peeled
  • 1/2 bird’s eye chili pepper
  • the juice of 1 lemon

  • the juice of 1 orange

  • the juice of 1/2 yellow grapefruit

Preparation

  1. Peel and chop the garlic. Chop the fresh ginger and half a chilli pepper. Mix the citrus juices. Infuse the garlic, ginger and chilli pepper in a cold brew.

  2. Let it infuse for 1 hour in the refrigerator and filter before seasoning raw clams or other shellfish.
