Ingredients
- 1/2 clove of garlic, peeled
- 1 inch fresh ginger, peeled
- 1/2 bird’s eye chili pepper

the juice of 1 lemon

the juice of 1 orange

the juice of 1/2 yellow grapefruit
Preparation

Peel and chop the garlic. Chop the fresh ginger and half a chilli pepper. Mix the citrus juices. Infuse the garlic, ginger and chilli pepper in a cold brew.

Let it infuse for 1 hour in the refrigerator and filter before seasoning raw clams or other shellfish.
