Breakfast sandwich with omelette, sausage and cheddar

Ingredients

  • 3 eggs
  • 1 bunch of parsley
  • 1 Toulouse sausage
  • 2 slices of cheddar
  • 1 knob of butter
  • 2 buns
  • 2 teaspoon(s) of ketchup
  • 2 teaspoon(s) of sriracha
  • 1 teaspoon(s) of mustard
  • 1 teaspoon(s) of olive oil
  • salt pepper

Preparation

  1. Beat the eggs, salt, pepper and add the finely chopped parsley.

  2. Pour the mixture into the non-stick pan without stirring. Cook over medium heat for 5 minutes. Cut the omelette into squares.

  3. Cut the sausage in half widthwise, then cut it in half lengthwise. Heat a non-stick pan. Pour in the olive oil. Grill the pieces of sausage flesh side down for 3 minutes. Turn them over and cook them for 1 minute. Turn again and place a slice of cheddar on each half of the sausage. Cover the pan so that the cheese melts, then place the mixture on a plate.

  4. Melt the butter in a pan. Brown the buns cut in half for 2 minutes.

  5. Spread the ketchup, sriracha sauce and mustard on each buttered side of the buns.

  6. Place a square of omelette on top, then half a grilled cheddar sausage. Close and enjoy.
