Herb and Berry Omelette


  • 4 eggs
  • 1/2 bunch of parsley
  • 1/2 bunch of coriander
  • a few sprigs of dill

  • a few sprigs of chives or 1 green onion

  • or 2 tablespoon(s) olive oil

  • 1 teaspoon(s) of turmeric
  • 1 tablespoon(s) of Greek yogurt
  • 1 tablespoon(s) of flour
  • 1 teaspoon(s) of baking powder
  • butter

  • 2 tablespoon(s) of barberry (from an oriental grocery store)
  • salt, freshly ground pepper


  1. Preheat the oven to 180°C.

  2. Rinse and chop all the herbs. Brown them with the green onion for 1 minute in a pan with olive oil. Add the turmeric, mix and remove from the heat.

  3. Beat the eggs in a salad bowl, add the yogurt, flour, yeast, salt and pepper. Beat well to create foam.

  4. Line a gratin dish with baking paper. Butter it. Spread the herbs, then pour the egg mixture over them and add the barberries. Mix.

  5. Bake in the oven at 180°C for 25 or 35 minutes. Stick a knife in the center, if it comes out dry, it’s cooked.
