What foods should definitely not be frozen?

Cucumber and tomato

Composed of 95% water, cucumbers and tomatoes (but also lettuce, radishes, etc.) do not tolerate low temperatures well and may look grey when defrosted. If the skin of the cucumber shrivels and becomes more difficult to peel after freezing, the texture and density of the tomatoes lose volume and flavor. It is better to freeze the tomato sauce and eat seasonal vegetables.

Eggs and mayonnaise

It is a very bad idea to keep eggs cold and want to extend their life in the freezer. Indeed, the cold of the freezer risks cracking or even exploding the shell of raw eggs. And once cracked, it opens the door to the proliferation of bacteria. We also avoid freezing a hard-boiled egg which will lose its texture and a mayonnaise which will become gelatinous. Eggs and mayonnaise must absolutely be consumed fresh.

Potatoes

Rich in starch, potatoes do not tolerate refrigeration or freezing, which accelerates their aging (they become black and soft). The same applies to all other tubers and root vegetables (parsnips, sweet potatoes, etc.), which should preferably be placed in a place away from light (a cellar, for example) to prolong their conservation.

Watermelon and melon

Full of water, these two fruits are complicated to freeze because the water they are composed of tends to solidify and then evaporate during defrosting, which risks making them lose their consistency and flavor. We prefer them fresh and we think about eating them in season.

Cheese and dairy products

Fresh cheeses and yogurts should not be stored at too low a temperature. Their fairly high water and moisture content does not withstand freezing. If yogurts and liquid preparations lose density and become lumpy when defrosted, hard cheeses such as Comté lose their taste and soft cheeses, such as Camembert, become floury. It is a good idea to focus on dishes that recycle cheese (quiches, pizza, etc.) whose expiry date is approaching.

Dessert creams

Made with milk, dessert creams (such as Danette, Mont Blanc, etc.) cannot be frozen as this could cause the milk in the dessert to curdle. They should be enjoyed fresh, paying attention to the expiry date.
