Recipe n°1: Fisherman’s broth with cod and fennel

A delicious and creamy broth, composed of winter vegetables, pepper, bay leaf, to wake up the fish.

How do we do ? Finely slice 2 fennel bulbs, 1 yellow onion, 1 stalk of celery, 2 leeks and 1 carrot. We brown everything with 6 tbsp. tablespoon of olive oil for a few minutes. Add 1 dried chili pepper, 1 bay leaf, 1 tbsp. tablespoons of fine salt, 1 l of filtered water and 200 g of frozen cod. Cover and let cook for 10 to 12 minutes. Finish by adding whipping or vegetable cream.

Recipe no. 2: Cabbage papillotes with cod

Gourmet papillotes with the good taste of green cabbage, cod, and smoked bacon.

How do we do ? Blanch 4 kale leaves in boiling water for 5 minutes. Drain and remove the central rib. Cut 600 g of cod into 4 parts, season with salt and pepper. We enclose each piece in a cabbage leaf, and we seal the whole thing with a slice of bacon per foil. We hold everything together with a toothpick. Sear the papillotes for 4 minutes on each side in an oiled frying pan and serve with steamed potatoes.

Recipe no. 3: Cod curry with sweet and savory coconut milk

A quick recipe, ultra-easy to prepare.

How do we do ? Peel and chop 1 shallot. We cut 1/2 peeled pineapple into pieces and 400 g of cod fillet into cubes.
Brown the shallot and pineapple in an oiled frying pan for 5 minutes with 1 tbsp. tablespoon of curry and tomato paste. Add 20 cl of coconut milk and the cod and leave to simmer for 10 minutes. Finally, we serve with coriander and basmati rice.
