After the hearty end-of-year holiday meals, here are balanced recipes that put seasonal vegetables in the spotlight. At the end of the week, the first weekend of January, we will celebrate Epiphany and taste the traditional king cakes with frangipane or brioche according to your tastes. Your shopping list for the week
Side vegetables, you will need cauliflower and kale, potatoes, baby spinach, giant white beans, carrots, celery, broccoli, red endives, lamb’s lettuce, arugula, portobello mushrooms, parsnips, radishes, leeks and finally some onions, garlic and shallots. For the fruitsnote to take oranges, apples and lemons.
Don’t forget the fresh herbs : coriander, parsley, mint, dill, chives, chervil and tarragon.
Then go to the butcher and choose chicken thighs, smoked brisket and speck. At the fishmongeronly take prawns.
For the rest of fresh and dairy products, please note. You will need full fat and soy cream, Greek yogurt, whole milk, but also grated and sliced cheddar, Saint-Marcellin, Rocamadour, Roquefort, raclette, parmesan and finally Comté. Don’t forget the puff pastry, star of the week, and the galette des rois!
We then move on to spicesnamely, oregano, dried pepper, thyme, saffron, paprika, green anise, turmeric and cinnamon.
For the dessertsyou will obviously need eggs, sugar and icing sugar, flour, baking powder, gelatin, cocoa powder, potato starch, honey, dark and white chocolate, maple syrup, orange blossom water, chestnut cream and a vanilla pod.
