Pan-fried minced steak, sweet potato and mushrooms
Ingredients
- 450 g beef ax
- 2 pods garlic
- 1 onion
- 1 bell pepper
- 250 g mushrooms from Paris
- 2 sweet potatoes
- 1 small box corn
- 1 c. tbsp mustard
- 125 g tomato sauce
- 1 c. coffee herbs of Provence
- 1 c. tbsp olive oil
- Salt
- Pepper
Instructions
-
Peel and cut the sweet potatoes into cubes. Wash the pepper, remove its seeds and cut it into strips. Wash the mushrooms and cut them in half. Peel and cut the onion and garlic cloves.
-
Heat the oil in a skillet over medium-high heat. Add the minced meat and brown for about 5 minutes, stirring and breaking up the meat with a wooden spoon. Once golden, transfer to a plate.
-
In the same pan, add the onion, garlic, mushrooms and sweet potatoes and brown over high heat for 3 minutes. Pour 15 cl of water (or 4 cl of water per person), tomato sauce, mustard, Provence herbs, salt and pepper. Cover and simmer for about 15 minutes or until the potatoes are tender.
-
Return the meat to the pan and add the drained corn. Stir over high heat for another 2 minutes to reduce the sauce. Serve.

Serve this dish with rice, quinoa, bulgur or simply bread.
