Ingredients
- 2 organic grapefruits cut in half
- 4 tablespoon(s) of mascarpone
- 4 tablespoon(s) of olive oil
- 8 sprigs of fresh thyme
- 4 teaspoon(s) of brown sugar
- 1 organic lime
- 20 crushed pistachios
Preparation

Preheat the oven to 180°C.

Drizzle a little olive oil over each grapefruit half. Add the thyme and brown sugar. Bake for 12 minutes.

Mix the mascarpone and 2 tbsp. tablespoon of olive oil. Once out of the oven, pass the grapefruit flesh and peel with a blowtorch to add very pleasant smoky aromas.

Place 1 half of grapefruit and 1 quenelle of mascarpone on each plate. Zest the lime all over, add a drizzle of olive oil and pistachios.
