Shrimp, chorizo, mango, zucchini

Ingredients

  • 500 g of raw peeled shrimp
  • 1 mango
  • 2 zucchinis
  • 1/2 Chinese cabbage
  • 120 g of chorizo
  • 1 pinch of chili powder
  • 4 sprigs of parsley
  • 1 lemon
  • olive oil

  • salt

Preparation

  1. Preheat the oven to 200°C. Line the baking tray with baking paper.

  2. Peel the mango. Cut the zucchini and mango into small cubes. Thinly slice the Chinese cabbage. Remove the skin from the chorizo ​​and cut it into slices.

  3. Mix everything with the chorizo, 2 tbsp of oil and the chilli. Spread everything on the baking sheet.

  4. Bake for 5 minutes then place the shrimps on the vegetables, drizzle with a little oil and bake again for 10 minutes. At the end of cooking, move the tray to the top of the oven to lightly grill.

  5. Strip and chop the parsley. Cut the lemon into quarters. Sprinkle the dish with parsley before serving with the lemon wedges.
