Ingredients
- 5 egg yolks + 1 for glazing
- 200 sugar
- 250 flour
- 200g of semi-salted butter
- 1 tablespoon(s) orange blossom (optional)

Preheat the oven to 160°C.

Whisk the 5 egg yolks with the sugar. Gradually add the flour. Melt the butter and incorporate it into the mixture. Knead the dough with your fingers. Add a pinch of salt and possibly the orange blossom.

Generously butter a 18 cm diameter dish with a fairly high edge. Pour the batter into it and smooth the top.

Whisk the remaining egg yolk and brush it over the cake.

Draw crosses on the top with the tines of a fork. Bake for 50 minutes. The cake should be golden brown. Let cool before unmolding.
