What is tzatziki?
Tzatziki is an easy Greek preparation, made with Greek yogurt, grated cucumber and a hint of mint or dill. A light drizzle of olive oil, lemon juice and a hint of garlic, salt and pepper and you get a quick, fresh and light preparation. It is most often served as a spread, to spread on a blini, pita bread, grilled toast, or even to enjoy by simply dipping cucumber sticks in it. In short, when the heat makes us want something fresh, in summer, tzatziki is perfect for an aperitif. If you can’t buy it ready-made at the supermarket, we suggest you prepare it yourself, at a lower cost, and why not, give it a little something extra. Here are 4 ideas that will revisit tzatziki.

4 ideas to enhance tzatziki in summer
Idea #1: Ouzo
From the original tzatziki recipe, add a few drops of ouzo, a traditional Greek spirit. This drink, with its aniseed flavor (similar to pastis) will surely awaken the taste buds of all your guests.

Idea #2: Garlic + sumac
For a spicy tzatziki, the garlic and sumac combo will work wonderfully. Not to mention that visually, the sumac will bring a little touch of color to the tzatziki.

Idea #3: Goat’s cheese
To add more intensity, leave out the Greek yogurt and replace it with goat’s milk fromage blanc, this will give a stronger taste. You can also use sheep’s milk fromage blanc, otherwise, regular fromage blanc will work just fine.

Idea #4: Tofu + samphire
Here’s an idea that will delight those who are lactose intolerant: replace Greek yogurt with tofu! A plant-based version of tzaziki enhanced with samphire for a boost of salty taste. This preparation requires blending the samphire, but to enjoy its crunchiness, you can also add a few pieces to the final preparation. Enough to enhance the tzatziki both visually and taste-wise.
