Grilled, marinated, raw or cooked, peppers rhyme with summer. From June, peppers appear on market stalls and enrich our plates with their bright colors.
Choosing the pepper
The diversity of peppers is illustrated by their shape, their color ranging from green to brown depending on maturity, but especially their range of flavors. A crunchy texture, a fruity flavor and a subtle bitterness characterize the green pepper. Yellow and red peppers are juicier, sweeter and much less bitter.
Cooking peppers
Peppers in all sauces
Peppers go well with a multitude of flavors. To accompany meats, fish, or vegetables, they bring a touch of freshness and sweetness that balances the stronger flavors. Peppers are also an excellent companion for spices, turmeric, oregano, cumin for example, to create rich and tasty dishes.
Peppers also shine for their adaptability. In salads, accompanied by tomatoes and cucumbers, peppers bring crunch and flavor. Baked, they can be enjoyed as is, incorporated into sandwiches, or as a topping for a pizza or a pie for example. Marinated, peppers will be more tender. Let them rest for several hours in olive oil, garlic and aromatic herbs. Serve them with fresh bread or crostini for an Italian-style aperitif.
Stuffed peppers
Their naturally hollow shape also makes them a perfect container for various fillings. Stuffed with rice or meat in its classic version, stuffed peppers are the ideal alternative to traditional stuffed tomatoes. For an aperitif, fill mini sweet peppers with a creamy mixture of goat cheese, herbs and nuts, or with a tuna, mayonnaise and caper preparation.
Mixed peppers
Peppers are also a great base for a refreshing gazpacho. Mix red and yellow peppers with tomatoes, cucumber, garlic, onion, red wine vinegar and olive oil and serve chilled! You can also enhance your traditional hummus by adding roasted red peppers, or mix them into a simple but delicious spread with goat cheese, garlic, olive oil and fresh herbs like basil or chives.
