A question of temperature
The mistake when cooking pancakes is not heating the pan enough. Let’s not let our greed take over the preparation process and take our time. The hotter the crepe maker, the more the dough is “seared”. We therefore cook the pancake over high heat, on a very hot pan. This way it will cook faster and more evenly. If you pour the pancake batter into a pan that is too warm, it will take longer to cook, causing the edges of the pancake to “wear out” as they are first exposed to the heat from the edges of the pan.
A crepe maker to cook crepes
Ideally, to cook crepes, you use a crepe maker. These pans are flat, with no curved edges. Thanks to this shape, the pancake cooks evenly and is easy to remove. If you don’t have a crepe maker, a classic frying pan will do the trick. Remember to butter the edges well so that the edge of the pan does not burn or stick.
Cooking in less than a minute
After pouring a ladle of pancake batter into the hot pan, remember to turn it over after 30 seconds to 1 minute, when bubbles appear on the top of the pancake. A round trip and it’s ready!
