Thomas Danigo's Pollen Vinaigrette

Ingredients

  • 1 teaspoon(s) of flower honey
  • 1 pinch of wasabi
  • 1 teaspoon(s) of pollen
  • 1 pinch of salt
  • 2 teaspoons elderberry vinegar or white balsamic vinegar
  • 1 teaspoon(s) rice vinegar
  • 4 tablespoons fruity olive oil
  • 1 tablespoon(s) dried marigold flowers (optional)
  • 1 sprig of thyme, leaves removed

Preparation

  1. In a salad bowl, mix the honey, wasabi, pollen, salt and vinegars.

  2. Add the olive oil little by little, stirring with a whisk.

  3. Add the thyme leaves and dried marigold flowers. Keep cool.
