Golden Book

During the last edition of the “Top Chef” competition, all eyes were on him: Danny Khezzar. While he was quickly eliminated from the competition, he performed flawlessly in the parallel competition orchestrated by chef and juror Hélène Darroze to return to the competition and reach the final! With his unforgettable laugh, his good humor and his atypical profile – between chef and rapper – Danny Khezzar left his mark on viewers. Good news, we can now find his recipes in his work called “The Golden Book of Danny Khezzar”. Excellence on every page! A perfect gift idea for Christmas.

What could be more comforting with the arrival of the first cold weather than a hot drink sipped in a cozy setting? At the house of Momus (1), which opened its first boutique café this summer (44, rue des Martyrs, Paris-9e), we delight in exceptional coffees assembled by Daniela Capuano, MOF Torréfaction. Then head to Petibon (2) (15, rue Montorgueil, Paris-1er; 47, rue Cler, Paris-7e) for a “flat white” or a “matcha latte” accompanied by an addictive financial hazelnut and homemade spread. At the house of Candle Kids Coffee (3) (107, rue des Couronnes, Paris-20th), we are testing the infusion of roasted cocoa bean shells, subtle and zero waste!

Latin bomb

A wind from Latin America is shaking up gastronomy, and more particularly street food.
Mexican chef Beatriz Gonzales (already at the head of two restaurants in Paris) has just opened her new address dedicated to premium tacos, Taco Mesa (40, rue du Faubourg-Poissonnière, Paris-10th). There you can enjoy thin corn tortillas filled with delicious fillings made from cochinita pibil (tender pulled pork) or, a veggie version, portobello mushrooms. Without forgetting the homemade guacamole.
Pin-Pan

Anne-Louis Brosseau and Alexandre Chapier, co-founders of Pin-Pan (79, rue Taitbout, Paris-9th), put Argentinian specialties in the spotlight with sandwiches that stand out, like the pulled lamb, a burger revisited garnished with shoulder slowly simmered in red wine, an eggplant condiment and piquillo peppers.

And for good homemade caliente dishes, escape with the book “Comida mexicana” (ed. Webedia Books, €25.90) by chef Rosa Cienfuegos. On the menu, tacos, of course, but also empanadas or tamales, a specialty made from spicy meat or cheese stewed in a corn husk.

Groot
© Salomé Rateau
Do you remember Groot, the mischievous and lucky onion of Albane Auvray, candidate for the last season of “Top Chef”? Good news, the latter and her partner Hugo Riboulet, big winner of the 2023 edition, are joining forces to open a street food concept around the pie. A micro-place to highlight this traditional, too-forgotten dish! Of course, “Top Chef” obliges, we imagine that the creations will live up to the excellence of the cooks. We look forward !

Crazy spices
© Press
To spice up the holidays and our everyday cooking, here are three brands that don’t lack spice. The young French house Grandpa ( pepere.fr) is entirely dedicated to peppers and has seven which all have their specificities: white penja, timut, red kampot… To celebrate its 25th anniversary, Exotic Land (terreexotique.fr) highlights five mixes of spices: Breton curry, Trapper’s mixture or even Cajun blend. At the house of Ankhor (ankhor.fr), which mainly collaborates with chefs, all the spices are French: caraway from Drôme, wild oregano from Occitanie, coriander from Auvergne… Quite a journey!
