Ingredients
- 250 g green lentils
- 200 g smoked tofu
- 1 carrot
- 1 tablespoon(s) of coarse salt

the vinaigrette
- 1 large shallot
- 1 large clove of garlic
- 5 tablespoon(s) of olive oil
- 2 tablespoon(s) tamari sauce
- 2 tablespoon(s) lemon juice
- 1 teaspoon(s) of smoked paprika

/4 teaspoon(s) cayenne pepper
- 1/2 teaspoon(s) of salt
Preparation

Rinse the lentils, drain them then pour them into a large volume of cold salted water.

Bring to the boil and simmer for 15 minutes.

Prepare the vinaigrette. Peel and chop the shallot. Peel, degerm and crush the garlic clove. Put them in a large salad bowl with the other vinaigrette ingredients and mix well.

Cut the smoked tofu into cubes and add it to the contents of the large salad bowl. Mix well.

Peel the carrot and cut it into small pieces.

Pour them into the pan and cook for an additional 5 minutes. Add salt 1 minute before the end of cooking then drain.

Transfer the lentils and carrots to the large salad bowl, mix and serve warm.
