Choosing a vegetarian dish or aperitif is not a compromise, quite the contrary. We assure you, a vegetarian Christmas meal will be as festive and refined as a traditional Christmas menu. If you are still hesitant, not only is it an ecological choice, but it is also a significant economical option. Vegetables, whatever they are, will always be less expensive than the cheapest meat. Another advantage is that by offering a vegetarian Christmas dish, you ensure that everyone at your table can fully enjoy the meal, whatever their eating habits.
Cook a vegetarian Christmas dish
When you think of New Year’s Eve, you most likely imagine meat-rich dishes like a traditional capon, turkey or roast beef. But this year, why not surprise your guests with a vegetarian dish? As usual, we focus everything on the ingredients, their quality and their presentation. And I might as well tell you that seasonal products offer an ideal palette of flavors (and colors) for your festive meals. We therefore turn to seasonal vegetables such as squash, mushrooms, Jerusalem artichokes and cabbage, which will bring both vitamins and deliciousness to your dishes. Also think about cereals: barley, buckwheat, quinoa, red rice… Not only are they easy to prepare, but also add a beautiful texture to your festive dishes. It goes without saying that we don’t forget the holiday essentials: truffles, mature cheeses, or even chestnuts, ingredients of character whose potential is revealed with carefully selected spices and fresh herbs. In summary, it all depends on the quality of the products and your ability to play with associations. We try revisiting holiday classics in a vegetarian version: a vegetarian pie, a vegetable blanquette, or even an ancient vegetable gratin. And why not innovate with a generous pasta dish or a creamy risotto that should appeal to your guests. In terms of presentation, we play with contrasts of textures and colors that catch the eye. For example, add homemade vegetable chips when serving which will add a crunchy taste and originality to your presentation. Instead of throwing them away, use the leaves of your vegetables, especially cauliflower, roasted in the oven at 190°C for 20 minutes.
