Whether roasted, pan -fried or sliced, Paris mushrooms are perfectly integrated into our winter recipes.
Small, dodus, white, beige or brown, Paris mushrooms are easy -to -cook vegetables by definition. Without forgetting that the Paris mushroom is consumed from head to foot! Once you have delicately cleaned or brushed the hat and the foot of the mushroom, you cut the earthy end, then go to the cut. In fine strips, halves, neighborhoods, cubes, or Brunoise, anything is possible.
Importance of coloring
On the recipe side, the Paris fungus lends itself to all the fantasies. Fabulous in raw carpaccio, simply embellished or not with vinaigrette or parmesan shavings, it is in its cooked version that we prefer, especially in winter.
Inseparable from the famous garlic and parsley parsley, when it cooks, this small mushroom, like its accomplices, rejects a lot of water. We therefore take care to cook it long enough over high heat to avoid a “floats” result. Indeed, if we do not cook it enough, the preparation will not be nicely golden as we like – thanks to the famous reaction of Maillard -, but will undoubtedly remain without coloring. And coloring, when we speak “mushroom”, deserves our full attention! It brings gluttony but also taste to our preparation. But before achieving it, it is imperative that the “Champipi” of our hearts, rejected all its water. Without that, no coloring, and less delicacy. CQFD.
Seasonal associations
To stick to the season, we obviously trust the winter vegetables, gourmet cheeses, roasted and pan -fried meats, or cute sandwiches, for our meals. And in the mushroom kingdom, undergrowth and smoke flavors are obviously welcome! Marrying to perfection with other mushrooms, it can also be coupled with bacon, raw ham, truffles, smoked paprika, meat broth, or chestnuts.
