Good flavors
To face the ambient cold and the wind, what better idea than a gourmet recipe, perfectly in season?
To prepare it, we rely on autumn fruits and vegetables such as squash – butternut squash, spaghetti squash, pumpkin –; mushrooms such as porcini mushrooms, oyster mushrooms, chanterelles, button mushrooms, shiitake mushrooms; but also spinach or cabbages. Of course, we don’t forget the sublime potato, an amazing spud, which can be transformed into gratin, mash, soup, cream, or chips. We celebrate the return of the sweet potato to our plates; oilseeds such as hazelnuts, pecans, or almonds; honey; or even autumn spices such as cinnamon, nutmeg, ginger, star anise, or cloves.
Another product to highlight in your dishes: cheese. Camembert, raclette, reblochon, brie, gorgonzola, we only ask one thing of the divine cheese this season: that it melts! In a croque-madame, a cordon bleu, or puff pastries, we don’t hesitate to enclose it between two slices of bread or puff pastry so that it reveals the best of itself.
The good recipe
When you are pressed for time, in addition to choosing the ingredients, you have to bet on the right recipe. Homemade pizza, gourmet turnovers, savory autumn tarts, pasta gratins, are easy options to cook.
The good idea that is easy to implement on weeknights? Eggs! Soft-boiled, hard-boiled, scrambled, fried, boiled, in frittata, tortilla, or omelette, they come in all flavors and are easily garnished with fall vegetables.
