November returns and brings with it rain, wind, clouds, but also squashy recipes, runny cheese, dripping chocolate, and spicy flavors.
Autumn again and again
That’s it, autumn is here at its least pleasant… Rain, gray weather, bare trees and strong gusts of wind are the norm, much less poetic than the shimmering colors of the forests in September/October. If the environment becomes increasingly harsh, on the plate, squash, mushrooms, sweet potatoes, parsnips, porcini mushrooms, cabbage, leeks, carrots are always present for maximum sweetness and comfort.
Conviviality on the menu
Like any month of autumn but also winter, in this cold season, we comfort ourselves with great dishes to share. XXL gratins, savory autumn quiches and tarts, inexpensive family dishes, seasonal slow-cooked recipes, there are many inspirations around a single rule: generosity. Cream, cheese, velvety sauce, all the tips are good to add deliciousness to your dishes.
The right recipe
To further include its recipes in the season, they are prepared according to certain methods. Understand: if we favor raw carpaccio, ceviche, salad, in summer; in fall/winter, cooked, roasted, simmered, and velouté are preferred.
We therefore offer November fruits and vegetables mixed in velouté; pan-fried with aromatics and spices; oven roasts, etc. Warm and colorful recipes that soothe the heart on these rainy and windy days.
