To properly celebrate Easter, what better guest than the Passover lamb?
The Easter lamb, star of the meal
Traditional symbol of the Easter festival in the Jewish and Christian religions, the Passover lamb remains a delicacy when the bells ring. Representing purity and innocence, this meat is a must-have for the Easter meal, and comes in many variations.
Roasted, stuffed, sweet and sour, simmered… Lamb is crunchy in a grilled version, delicious with a tasty stuffing, sweet when combined with fresh or dried fruit, or even melting when left in the oven for a few hours . And as Easter is celebrated in the heart of spring, we do not hesitate to combine it with small seasonal vegetables such as green asparagus, turnips, artichokes, radishes, etc.
Leg, rack, or shoulder
As with any meat, there is not just one piece of lamb that can be used for your Easter menu. You must therefore choose your piece according to its recipe – obviously – but you must also keep in mind the cooking time of the meat. If you choose a large piece to share like lamb shoulder, the cooking will take longer than if you choose chops. In all cases, keep in mind that you must let the meat rest after cooking so that the juice is distributed in the flesh and provides the meat with the desired softness when eaten.
