The croque-monsieur adapts to all seasons, even spring!
The timeless croque
The croque-monsieur is a bit like quiche Lorraine or ham and butter, classics that we obviously love but also which have little attachment to temporality and the seasons. Never out of fashion, there is no really “good” time to enjoy a croque, even if, due to its composition – bread, ham, cheese, and béchamel, in the classic version – we rather associate it with cold days . That being said, nothing prevents us from taking a step aside and adding spring products such as young spinach shoots or fresh flowers.
Also vegetable or herb coulis bring freshness, just like carrot or chioggia beet pickles. Green asparagus finely cut into tagliatelle is also an easy and original option, as is pea puree, to be combined with a rather fresh cheese.
On the protein side, white ham is not the only option, other cold meats like bacon, raw ham, chorizo, but also coppa, liven up the croque-monsieur. Of course, you can also skip this element, and focus only on cheese!
Last ingredient that changes everything: sugar. Yes, this little imp to be consumed in moderation obviously, is also a great ally on the savory side. In a croque, for example, we rely on the use of red fruit jam to temper a shallot chutney, but we can also add a dab of honey to the cheese before letting the croque soak in the sun.
