I love the combination of chia and flax seeds to nourish the intestinal microbiota and help the body gently detoxify. Recipe taken from Great book of women’s nutrition.
Ingredients for 4 to 6 people (6 cups)
Porridge
- 3 cups of unsweetened vegetable drink
- 1 cup oatmeal
- ½ cup rinsed quinoa
- ½ cup frozen blueberries (preferably wild)
- 2 tbsp. to s. chia seeds
- 2 tbsp. to s. ground flax seeds
- 1 tbsp. to s. coconut oil
- 1 tbsp. to c. ground cinnamon
- ½ tsp. to c. kosher salt
Possible toppings
- Toasted flaked almonds
- Pecans
- Nut
- Almond puree
- Hemp seeds
- Banana slices
- Fresh blueberries
- Granola
Preparation
Combine the plant-based drink, 2 cups water, oats, quinoa, blueberries, chia seeds, flax seeds, coconut oil, cinnamon and salt in a saucepan, then bring to a boil over high heat.
Reduce the heat to low and simmer for about 10 to 15 minutes, until the porridge reaches the desired consistency.
Pour the porridge into bowls and serve immediately, with the topping of your choice.
