Pork ribs soup, watercress

Ingredients

  • 350 g of free-range pork ribs
  • 100 g of watercress
  • 35 g finely chopped ginger
  • 2 tablespoon(s) fish sauce
  • 1 spring onion

Preparation

  1. Rinse the pork ribs, place them in a salad bowl and cover them with boiling water. Drain and start again.

  2. Place the ribs in a saucepan, add 70 ml of very hot water and the ginger. Bring to the boil over medium heat then simmer for 20 to 30 minutes, covered, until the ribs are tender.

  3. Season the dish with fish sauce when serving, add the watercress and stir until cooked. Garnish with slices of spring onion.
