Avocado-chocolate fondant

Ingredients

  • 2 ripe avocados
  • 1 vanilla pod
  • 200 g dark baking chocolate
  • 80 g butter
  • 3 eggs
  • 80 g brown sugar
  • 50 g flour
  • 1 pinch of baking powder

Preparation

  1. Cut the avocados in half, remove the pits, scoop out the pulp and put it in a blender.

  2. Split the vanilla pod in half, remove the seeds and add them to the avocado. Blend until smooth.

  3. Melt the chocolate and butter in pieces in a bain-marie, mixing well.

  4. Add the chocolate-butter mixture to the avocado-vanilla cream and mix again until smooth.

  5. Beat the eggs with the brown sugar until the mixture turns white. Add the avocado-chocolate mixture and mix well. Add the sifted flour and baking powder.

  6. Preheat the oven to 200°C.

  7. Butter 6 individual molds and fill them three-quarters full with the mixture. Bake for 10 minutes.
