Here is the low-calorie, high-protein dessert of the summer by chef Pierre Augé

The white omelette, the instant dessert

What if you prepared an omelette for dessert? Of course, not in any way, since this one is different from classic omelettes: it is a white omelette, that is to say that “we only keep the white of the egg”. This is why the base of this dessert immediately becomes low in calories, since the majority of the energy intake of the egg is contained in the yolk (307 kcal per 100g of raw egg yolk*), and not the egg white (48 kcal per 100g of raw egg white*). As for proteins, the egg yolk alone contains 15g per 100g*; and the egg white, 10g per 100g. So, there is certainly less protein in the white than the yolk of the egg, but it is still a good intake. Whether you’re on a fitness diet or just looking for a source of protein, the white omelette is for you.

Continue the momentum of a white dessert by flavoring the omelette with coconut! In oil, sugar and shavings, this white-fleshed, fiber-rich oleaginous fruit can be used in all its forms. Take advantage of it to replace butter and refined sugar, and thus obtain a 100% healthy dessert.

Prepare the white omelette

For one person, separate the whites from the yolks of 3 eggs. Use the whites by “incorporating a little coconut oil, coconut sugar, and why not, toasted grated coconut to enhance the whole thing, then whisk” advises the chef. Pour the mixture into a hot pan. Once the omelette is ready, roll it up and serve. Then add as much fruit as desired! The chef recommends red fruits for a better contrast and association with the coconut. As a result, you have a dessert rich in vitamins thanks to the red fruits, fiber thanks to the coconut, and protein thanks to the egg white base.

What to do with egg yolk?

To avoid waste, keep the reserved egg yolks. They could be useful for preparing mayonnaise or brushing shortcrust pastry, bread or biscuits before putting them in the oven for perfect coloring.

In short, the white omelette, a more than original and different dessert!
