Ingredients
- 4 comice pears
- 100 g of 80% dark chocolate
- 80 g of raisins
- 50 ml (3 tbsp.) sherry
- 150 g of brown sugar
- 100 g of unsalted butter
- 120 g of T45 or all-purpose flour
- 100g oatmeal
- 1 teaspoon(s) ground cinnamon

Immerse the raisins in very hot water and leave them for 10 minutes. Drain and reserve in a salad bowl with the sherry. Mix. Peel and cut the pears into quarters and put them in the salad bowl with 50 g of brown sugar.
Mix and let sit for 30 minutes. -
Coarsely chop the chocolate. Preheat the oven to 180°C (fan) and lightly butter the mold. Arrange the pear quarters inside and sprinkle them with chocolate.

Cut the butter into small cubes in a salad bowl and pour in the sifted flour. Add the oats, remaining brown sugar, cinnamon and 1 pinch of salt, then mix with your fingertips until you have large crumbs. Work quickly so as not to reheat the ingredients and preserve the lumpy texture.

Distribute this preparation over the pears. Bake for 45 minutes, until the dough is lightly golden and the fruit is soft. Let the crumble cool for a few minutes and serve it warm or cold, accompanied by chocolate ice cream.
