With the arrival of fall, the sweet potato becomes an essential part of our seasonal preparations. The sweet potato, although it has the name “potato”, is not from the same family as the potato. However, they share many qualities. Rich in vitamins, antioxidants and fiber, it is a healthy and invigorating vegetable. Its sweet taste and soft texture make it an excellent substitute for its less colorful cousin in classic recipes: parmentier, mash or even fries. But this tuber is also an excellent base for your autumn dinners: gratins, gnocchi, soups or even curries. You can even incorporate the soft, sweet flesh of the sweet potato into fall desserts. Small reminder: we choose it very firm, heavy, without stains or bruises.
Cooking the sweet potato
The flavors that accompany sweet potatoes in autumn are as numerous as they are varied. It goes wonderfully with seasonal mushrooms and squash of all kinds. We enhance its sweetness with spices, cumin, nutmeg or chili pepper, and we season it with aromatic herbs, sage, thyme or rosemary, which will do it justice. The melting cheeses make it even more delicious: goat’s cheese, feta, morbier or even Roquefort for the more daring, all combinations are welcome. As we welcome the raclette season with great pleasure, try replacing the traditional potato with its orange sidekick. For those who can’t imagine a raclette without cold meats, choose chorizo, whose spices pleasantly enhance the sweetness of the vegetable.
