Here is why you always have to keep the cauliflower in the fridge

Consumed raw in salads, cooked in gratin, puree or curry, cauliflower is not only versatile, but it is also a real ally for our health. Choose the right product

So opt for a cauliflower whose leaves are green and firm, and whose head is compact. Avoid those with brown or yellowed spots. Another essential precaution: cauliflower is particularly sensitive to ethylene, a gas naturally emitted by certain fruits and vegetables which accelerate their maturation. To prevent it from deteriorating too quickly, avoid storing it near apples, pears, avocados or other ethylene producing foods.

Favor the refrigerator

Unlike many fruits and vegetables, it is in the refrigerator that cauliflower likes best, because it keeps its freshness and nutritional qualities. In the open air, he deteriorates quickly, becomes soft and loses his flavor. Thus, placed in the vegetable trap, ideally wrapped in a clean cloth, it keeps up to a week. No need to wash it before storing it, on the contrary, humidity will accelerate its rotting. Be careful, however, if the raw cauliflower keeps well, cooks it, it rots quickly. Its shelf life is 1 or 2 days in the fridge, maximum. To keep it much longer, remember to freeze it after having turned it a few minutes in boiling water.
