How to choose peaches and nectarines?
A ripe peach or nectarine is fragrant and supple. The skin of the nectarine should be spotless while that of the peach should be spotted with yellow. On the other hand, the color of the flesh (yellow or white) is not a criterion to remember. This coloring is due to pigments which have no influence on the aroma or texture.
If you want to keep your fruits longer, you can choose them harder. Peaches and nectarines continue to ripen once picked, especially if you place them next to climacteric fruits like bananas and apples. However, avoid greenish fruits. They were harvested too early and will ripen poorly.
What is the difference between peaches, nectarines and nectarines?
Easy, we recognize peaches by the fine down that covers their skin. It will be darker for yellow peaches and lighter for white ones. You can also find flat peaches, which live up to their name, and vine peaches. The latter are recognizable by the blood color of their flesh. There is also a variety called peach-apricot. As juicy as a peach but with the color and flavor of apricot, the ideal compromise.
Nectarines and nectarines, for their part, have smooth skin. To differentiate them, you will have to look at their core. If it comes off without any problem, it’s a nectarine, if the pulp remains firmly attached, it’s a nectarine. Another clue: the skin of the brugnon is red while that of the nectarine can range from yellow to red.
How to cook peaches and nectarines?
As good raw as cooked, all recipes are possible. As a starter, slip a few nectarine wedges into a caprese salad to create an original salad. With mozzarella or fresh cheese, it’s delicious.
Use yellow fruits to liven up your meat skewers and seafood tartars. To do this, we favor chicken, duck breast, tuna or a sea bass fillet.
