This pivotal week is a transition between summer and fall.
Two seasons, two spirits meet this week on the menu. Summer is here again with no-cook recipes, including raw fish, ceviche, and salad. But autumn, with its notes of dried fruits, figs, grapes and coffee, begins to arrive on the plate.

At the primeurwe put in our basket zucchini, oak leaf salad, arugula, ginger, spinach, endive, watercress, white cabbage, carrots, cucumber, button mushrooms, shallot, garlic, yellow and red onions.
Along the way, we take some aromatic herbs : mint, coriander and basil.
For the fruitswe note on his list: yellow and green lemons, grapes, and pears.
The radius meat and cold cutsyou will need smoked bacon, beef carpaccio, filet mignon, pork belly, and chicken breasts.
