Poached figs, spiced syrup

Ingredients

  • 12 ripe figs
  • 1 organic orange
  • 3 cloves
  • 2 star anise
  • 1 teaspoon(s) coriander seeds
  • 1 cinnamon stick
  • 80 g sugar
  • 50 cl of water
  • yogurt ice cream

Preparation

  1. Remove the zest from the orange, then cut it in half and squeeze it to collect the juice.

  2. Place the zest and juice in a saucepan with the cloves, star anise, coriander, cinnamon, sugar and water.

  3. Bring to the boil then cook for 10 minutes over low heat. Add the whole figs. When the simmering resumes, continue cooking for 5 minutes. Leave the figs to cool in the syrup, covered.

  4. Remove the figs from the syrup using a skimmer and place them in the fridge.

  5. Heat the syrup again over high heat until it thickens. Let it cool.

  6. Serve the figs with a scoop of yogurt ice cream, topped with spiced syrup.
