Nowadays, a classic bruschetta is a slice of country bread, sometimes rubbed with garlic, and certainly garnished with tomatoes, mozzarella, olive oil and basil. A dish with unmistakable Italian accents! As for wine, you can stay in Italy with a white from the Soave appellation, or open a white from Provence.

For more elaborate flavors, we prepare bruschettas with grilled asparagus and burrata. The smoky notes of the asparagus, as well as their slight bitterness, counterbalance the creamy fat of the cheese. In the glasses, we stay in Provence with a wine from the rare Palette appellation.

Lovers of sweet and sour notes, why not combine eggplant and mint on bruschetta? The latter will give the dish all its vegetal freshness. To accompany this dish, uncork a Picpoul de Pinet, a taut white which will bring beautiful citrus notes.
