Who doesn’t know the essential croque-monsieur recipe, a regular on Parisian bistro tables. Easy to make, it traditionally consists of white ham, Gruyère and béchamel sauce. Everything is superimposed between two slices of toasted bread, then covered with a final layer of béchamel and cheese, before being slipped into the oven, or cooked in a pan. A recipe so simple that it produces many variations, including the famous croque-madame, decorated with a fried egg. In autumn, this recipe, as comforting as it is tasty, just needs to be spiced up with seasonal products.
How to make an autumn croque monsieur?
Unsurprisingly, in this season of falling leaves, it is autumn fruits and vegetables that are in the spotlight, and which we slip generously between our slices of bread and layers of béchamel. Pumpkins, butternut, mushrooms, sweet potatoes but also apples or pears, so many products with comforting colors and flavors, which go perfectly with melted cheese. They can be cut into thin strips and added directly to the sandwich raw, or even pureed in the case of squash for example. Apples, for their part, and other crunchy autumn fruits, can just as easily be caramelized with maple syrup or sugar, to accentuate this unique texture. For an extra touch of flavor, we turn to spices and fresh herbs such as thyme or rosemary, but also sage leaves which will flavor everything. Finally, you can spread the bread with a sauce of your choice: mustard, mayonnaise, ketchup or even jam, for an original sweet and sour mixture. Instead of the classic white ham, some even use prosciutto or bacon which will only bring additional flavors and textures to the final result. Obviously, nothing prevents you from abandoning meat for a 100% veggie autumn croque-monsieur.
