What vegetarian recipes for the whole family?

Tradition obliges, for many of us, family dishes most often evoke roast chicken, our grandmother's beef bourguignon, or veal blanquette. However, it is entirely possible to concoct generous and convivial recipes, without meat. With the dishes available in large formats, such as all-in-one dishes, you will be able to delight family and friends.
But then, what recipes can we draw inspiration from?
As for simmered dishes, we revisit blanquette and bourguignon in a vegetarian version, with only vegetables.
Still among the French classics, we also think of quiche, which is garnished with seasonal products. Conversely, if you are looking for lightness, opt for whole salads with fresh produce, legumes or eggs, cereals, etc.
To delight the children, consider a plate of pasta, vegetarian lasagna or why not a gratin? Hiding vegetables under a layer of cheese or béchamel is often one of the solutions to getting vegetables accepted by the most recalcitrant people. And for festive evenings, we make a delicious vegetable pizza, leaving everyone the choice to personalize their topping. I promise, everyone will agree.
We don't forget the proteins
The common misconception about a vegetarian diet is that it does not contain protein. Spoiler alert, this is false, because if vegetarianism excludes the consumption of meat and derived products which have led to the death of the animal, there are other sources of protein in nature. First, eggs, which contain more than 12 g of protein per 100 g, as much as some cold meats. They are also significant sources of iron, vitamins (including vitamin B12), and good lipids.
In the family of animal proteins, cheese also ranks very high. Although their protein content varies greatly, cooked pressed cheeses have a protein level of between 20% and 30%, the same as meat. Be careful though because they are very rich in saturated fats, so it is better to limit yourself to one portion (between 20 and 30 g) per day.
What about plants then? The latter also contain proteins, they are found in legumes, also known as “dried vegetables”, such as chickpeas, dried beans, soya, etc. ; in nuts; and seeds. Almonds, hazelnuts and other nuts, as well as flax seeds, sesame, etc. contain between 10 and 20% protein.
Always with seasonal products
One of our favorite rules in the kitchen that we like to repeat over and over again (this is just the beginning), namely, always use seasonal fruits and vegetables. Eating tomatoes in December and cabbage in July is not ecological. This is even less good for your wallet, since out-of-season products are more expensive, and for your body, because they contain fewer nutrients.
Instead, we enjoy the plants of the moment. Asparagus, fennel, peas and broad beans in spring; tomatoes, peppers, eggplants, etc. in summer ; And so on. So we vary our diet and enjoy a new palette of flavors each season.
