Chocolate ganache: a tasty preparation
In its liquid form, you can use a chocolate ganache to make the icing of a cake, garnish a pie or even use it in a sauce like with chocolate fondue for example. In its solid state, you will use the ganache to fill pastries, such as a chocolate tart or charlotte, a rolled cake or even macaroons. Preparing a ganache requires cream and chocolate in equal proportions, sometimes with milk or butter… when it is not all three at the same time.
This appetizing mixture results from the mixture of these different ingredients brought to the boil and poured over the chocolate. We then stir everything gently to obtain a more or less thick paste.
Pastry chefs also play with the different textures of the ganache to refine its density and use it wisely in their different creations. For example, icing a cake or filling a confectionery does not require a ganache of the same density. The more pieces of chocolate you add compared to the cream, the thicker your ganache will be. So think in advance about the different recipes for which you will have to prepare it.
