- 800 g pea pods
- 300 cl of spring water
- 50g butter
Bring the spring water to the boil, then add the previously washed pea pods. Cook for 5 to 10 minutes and drain, reserving a little cooking water.
Place the cooked pea pods in the bowl of a blender and blend, relaxing with a little reserved pod cooking water.
Pass through a sieve until you obtain a smooth and homogeneous texture.
Pour the mixture obtained into a saucepan, and whisk the puree with butter. Arrange and place a cube of butter on top of the puree.
