Salad of cucumbers, pomegranate, tomatoes, parsley and green peppers


  • 2 cucumbers
  • 3 tomatoes
  • 2 sweet green peppers
  • 3 sweet pickles
  • 1 pomegranate
  • 2 spring onions
  • 1 bunch of parsley
  • 30 g almonds
  • 10 cl of pomegranate juice
  • the juice of 1 lemon

  • 3 tablespoons olive oil


  1. Peel the cucumbers, cut them in half lengthwise and then remove the seeds using a spoon. Then cut them into small cubes.

  2. Finely dice the tomatoes, chillies and gherkins. Deseed the pomegranate. Finely chop the spring onions and parsley. Roughly chop the almonds.

  3. Mix all the ingredients in a salad bowl with the pomegranate and lemon juices and the olive oil. Add salt and pepper.

  4. Enjoy chilled, with Turkish bread for example.
