Strawberry Tiramisu


  • 600 g strawberries
  • 3 tablespoons amaretto
  • 4 eggs
  • 130 g of sugar
  • 330 g mascarpone
  • 35 spoon cookies
  • 1 pinch of salt
  • a few sprigs of fresh thyme (optional)


  1. Mix 250 g of strawberries with the amaretto to make a coulis. Cut the remaining strawberries into cubes.

  2. Separate the egg whites from the yolks. Beat the yolks and sugar until the mixture turns white. Add the mascarpone and mix well. Beat the egg whites with a pinch of salt. When they are firm, add them to the mascarpone mixture using a spatula to obtain a homogeneous paste.

  3. Pour the strawberry coulis into a deep plate and dip the biscuits in it. Arrange them gradually in the bottom of the dish. Cover them with strawberries then the mascarpone mixture. Repeat the operation until the ingredients are used up. Optionally sprinkle with a little fresh thyme.

  4. Reserve for at least 12 hours in a cool place.
