Marinade for Matan Zaken tomatoes

Ingredients

  • 1 large pineapple or green zebra beefsteak tomato
  • 1 large drizzle of olive oil
  • 1 teaspoon(s) sherry vinegar
  • 1 good pinch of Maldon salt
  • a few small leaves of fresh oregano

  • black peppercorns

  • a few pink berries, just crushed

Preparation

  1. Cut the tomato into pieces and put them in the mixture of olive oil and sherry vinegar with salt, fresh oregano, a few peppercorns and pink peppercorns. Leave to marinate for 1 hour at room temperature, then put back in the fridge just before eating.
